INGREDIENTS FOR COOKING
- 2 Prime BIOANGUS 220g - filet mignon
- 1 tablespoon of finely ground coffee
- 1 tablespoon dark brown sugar
- 1 tablespoon pure chili powder
- 1/2 teaspoon cumin (ground)
- 1 tsp oregano (dried)
- 1 tbsp. with salt and pepper meat
- 100g of Chipotle Hollandaise sauce (recipe follows)
- 2 egg yolks
- 1 tsp lemon juice
- 1/2 tsp. salt and pepper
- 2 teaspoons Chipotle in Adobo sauce puree
- 100g unsalted butter (melted)
- 1 teaspoon coriander (chopped)
STEPS FOR COOKING FILLET Mignon

FILET Mignon ROLLED IN FINELY GROUND COFFEE

Mix together coffee, brown sugar, chili powder, cumin, oregano, and 1 tsp. of salt and pepper. Set aside.

Remove the fillets from the packaging and dry them with paper towels.

Brush each fillet with 1 tbsp. coffee spice. Let the steaks marinate for about 30 minutes at room temperature.

Preheat oven to 400º.

Heat a cast iron skillet over medium-high heat. Add 2 tbsp. canola oil in a pan.

Season each steak with 1 tsp. 44 Farms Salt & Pepper Mix.

Fry the fillets for two minutes on each side. Place the fillets on a tray and cook in the oven for 5 minutes for medium rare.

Let rest 5 minutes before serving.

Serve with chipotle hollandaise.

CHIPOTLE HOLLANDAISE SAUCE

Heat a 3–4 quart pot with two inches of water to a boil.

In a medium-sized bowl that will rest on top of the pot, whisk together the egg yolks, lemon juice, 44 Farms Salt & Pepper Blend, and chipotle puree.

Whisk constantly over simmering water until yolks are slightly thickened, about two minutes.

Remove from heat and slowly add hot melted butter while whisking.

Toss with chopped cilantro and serve immediately.
